      Great question,

      Basically the adaption to different climates comes from how the plant holds onto water which is essential for them to survive.

      plants “breath” through little pores in their leaves called stomata. Oxygen comes in and carbon dioxide goes out. But when these pores are open water can also escape. So in very warm countries, plants can close these during the day when it is warm and open them up at night when it is cooler. This means they can still exchange gases but not lose all their water. They are changing how they carry out the process called photosynthesis (building with light)
